Mixed Berry Muffins + Awesome News!

Hi!  Before I post my Mixed Berry Muffin recipe, I want to apologize for my delayed post.  I was unable to post last night because of such a crazy day!  I said I would hopefully have some good news to share with you and I do!  I was offered a teaching position yesterday and I accepted!!!  I taught a lesson yesterday morning in a first grade classroom and was offered a job right on the spot :)  I am so excited to finally be utilizing the degree I spent too much money on and I cannot wait to start teaching and working with children!  I begin on Thursday and I am so happy to close one chapter of my life and begin the next.  I am not sure if this will change my schedule of posts - but, I will figure it out.  I am just so happy and excited right now!  And the rest of the day was a whirlwind - celebratory lunch with my mom, work, coaching, and football cake pop making the rest of the evening!  I was super exhausted and had to wake up at 4:45AM!

And now onto the recipe :)

Mixed Berry Muffins


1 cup all-purpose flour
1 cup whole wheat flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup canola oil
1/4 cup honey
1 large egg
1 cup mixed berries - I used blueberries, blackberries, and raspberries

Step 1: Preheat oven to 400 

Step 2:  Line a muffin tin with paper muffin cups 

Step 3: In a small bowl, add 1 cup all-purpose flour

Step 4: Add 1 cup whole wheat flour

Step 5: Add 1 tbsp baking powder

Step 6: Add 1/2 tsp salt and combine

Step 7: In a large mixing bowl, add 3/4 cup milk

Step 8: Add 1/4 cup canola oil

Step 9: Add 1/4 cup honey

Step 10: Add 1 large egg.  Combine on med-low speed, then add dry ingredients and combine on medium speed.

Step 11: Gently fold in 1 cup of mixed berries

Step 12: Fill muffin cups 3/4 full and bake for 18-20 minutes

Yields: 6 large muffins or 12-14 regular-sized muffins

These mixed berry muffins have the most amazing aroma.  The muffins made me miss summertime.  I wish I had enough batter to make a few mini ones, but fortunately I was able to sample the batter.  DELICIOUS!  I will definitely double this recipe next time, so I can keep some at home :)  I am excited to sell all of these muffins this weekend.  I think my family will definitely buy a few of these!  

And, tonight I am making freezer breakfast burritos and possibly some chocolate-caramel covered apple minis :)  Possibly more recipes to share!

Happy Wednesday :)  I had a great WIMBW!  My recipe was so delicious and filling - I couldn't even finish my baked oatmeal!  I had a hard time picking a recipe out because I haven't been to Whole Foods or Earth Fare in awhile - the last few weeks have been super crazy.  But, as I was flipping through Jenny Grothe's 75 Ways To Love Your Oatmeal, I remembered that I had strawberries from when I made my Mixed Berry Muffins (recipe to be posted tomorrow) and I started looking for a recipe with strawberries.   When I turned to page 79, I found Tart Strawberry Rhubarb Baked Oatmeal and I thought to myself "I better take this recipe and run with it" - that's the only type of running I will do :)  I did make s big substitution and once you read my recipe you will be able to figure out what is missing ;)

Tart Strawberry Banana Baked Oatmeal


1/2 tbsp chia seeds
1/2 tbsp hemp seeds
1/2 tbsp flax seeds
1/2 cup oats
1/4 tsp baking powder
1/4 tsp cinnamon
1/2 tsp vanilla
2 eggs
4 medium strawberries
1 banana, sliced
1/2 tbsp peanut butter

Step 1: Preheat oven to 350

Step 2: Add 1/2 tbsp chia seeds, 1/2 tbsp hemp seeds, and 1/2 tbsp flax seeds to oven-proof bowl

Step 3: Add 1/2 cup oats

Step 4: Add 1 cup milk

Step 5: Add 1/4 tsp baking powder, 1/4 tsp cinnamon, and 1/2 tsp vanilla

Step 6: Add two egg whites and combine

Step 7: Add four medium strawberries

Step 8: Add banana slices

Step 9: Bake at 350 for 30 minutes.  The eggs were still runny after baking, so I stuck my baked oatmeal in the microwave to a minute and a half.

I added 1/2 tbsp of all-natureal peanut butter to my Tart Strawberry Banana Baked Oatmeal.  I just love peanut butter and it was the perfect final touch!  This baked oatmeal was thick and creamy - I think I will stick my baked oatmeal in the microwave for about one minute every time now.  The Tart Strawberry Banana Baked Oatmeal was the perfect combination of tart and sweet.  The strawberries had that tart taste, but the sweetness of the bananas helped tame that tartness.  This oatmeal was very filling and I couldn't finish the last fourth - even though I wanted to!  My mom finished the rest and loved it.  I really need to start doubling my batches :)  And even though this oatmeal was very filling, it still had that nice, light taste that I enjoy so much!  This recipe definitely goes into the make again column!

**Lunch and dinner you have seen on a pretty consistent basis: Lunch - Burger Fresh California Burger (vegetarian) sans bun.  Dinner - Toasted slice of Ezekiel Bread topped with GoVeggie Mozzarella Slice and an organic cage-free egg fried in extra virgin coconut oil - I need to make sure to change it up on Wednesdays, so I can provide some awesome food pics :)

Chocolate Chocolate Chip Muffins!

Hi!  I decided to post my Chocolate Chocolate Chip Muffins first - because everyone loves chocolate or at least knows someone who does!  You may be thinking, "Okay, what is with all the muffin recipes?"  Well, my cheerleaders have a breakfast/brunch fundraiser, so I decided homemade is better than store-bought - and will always be healthier!  These muffins are delicious - my parents, sister, and cheerleaders all taste-tested, approved, and wanted more!  I also tried a taste of the batter - I couldn't resist and it was well worth it!

Chocolate Chocolate Chip Muffins


1 cup buttermilk or 1 cup milk with 1 tbsp lime juice - I didn't have lemon - I think outside the box ;)
2 eggs
1/2 cup unsalted butter, melted and cooled
2 tsp vanilla
1 3/4 cup all-purpose flour
2/3 cup cocoa powder
1/2 cup brown sugar
3/4 cup sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup semi-sweet chocolate chip minis

Step 1: Preheat oven to 375

Step 2: In a small bowl, add 1 cup buttermilk or 1 cup milk with 1 tbsp lime juice - I used Trader Joe's Unsweetened Vanilla Almond Milk

Step 3: Add 2 eggs

Step 4: Add 1/2 cup unsalted butter, melted and cooled

Step 5: Add 2 tsp vanilla.  Combine and set aside.

Step 6: In a large mixing bowl, add 1 3/4 cup all-purpose flour

Step 7: Add 2/3 cup cocoa powder

Step 8: Add 1/2 cup brown sugar and 3/4 cup granulated sugar - my brown sugar is in the bottom half of the 1 cup - I just ran out of brown sugar ;)

Step 9: Add 1 tsp baking soda, 1 tsp baking powder, and 1/2 tsp salt and combine

Step 10: Add 1 cup semi-sweet chocolate chip minis to dry mix

Step 11: Add wet mix to large bowl and combine
Looks delicious!  Is your mouth watering yet?

Step 12: Bake for 18-20 minutes or until a toothpick inserted in the center of the muffins comes out clean.
Chocolate paradise!

Yield: 6 jumbo muffins and 11 mini muffins 

Let me just tell you, the aroma of Chocolate Chocolate Chip Muffins baking in a hot oven is the most wonderful scent you can have in a house.  It's a good thing I have self-control or these muffins would've disappeared faster than it took to bake them all ;)  

I am excited for the feedback I will receive at the fundraiser - I probably should've made more ;)  Oh, well first come, first served!  I also have my yummy s'more muffins - what lucky customers!

"Cheat" Day And S'more Muffins Recipe

Hi!  Today was a little different than usual - we had a big birthday at work and there was an ice cream truck and free lunch.  Let's just say I went a little astray from my plan - but, I am staying accountable and admitting I had a "cheat" day :/  And I am going to share my "cheats" with you.

Crackers and cheese, grapes, cucumber and tomato salad, and chilled grilled chicken

Chocolate ice cream topped with warm caramel sauce, peanuts and whipped cream - I had three spoonfuls and got rid of it - self-control ;)

The rest of the day was healthy!

Now, I would like to share an amazing recipe I baked earlier this week - I am getting an early start on baking some goodies for a breakfast fundraiser for cheerleading.  I made jumbo s'more muffins on Monday and they are amazing!  I think they will be a big hit at the fundraiser :)  Everything that you need for a s'more is inside these muffins and it is awesome!  Here is my recipe adapted from Taste of Home:

S'more Muffins


2 cups all-purpose flour
4 graham cracker squares, crushed
1 tsp baking soda
1/2 tsp salt
1 large egg
1-1/2 cups milk with a few squirts of lime juice
1/4 cup canola oil
1/4 cup packed brown sugar
3 milk chocolate bars, broken in pieces
3/4 cup mini marshmallow

Step 1: Preheat oven to 375

Step 2: Add 2 cups flour to a large bowl

Step 3: Add 4 crushed graham cracker squares

Step 4: Add 1 tsp baking soda

Step 5: Add 1/2 tsp salt and combine

Step 6: In a mixing bowl, add 1 large egg

Step 7: Add 1-1/2 cups milk with a few squirts of lime juice

Step 8: Add 1/4 cup canola oil

Step 9: Add 1/4 cup packed brown sugar and mix well

Step 10: Add dry ingredients to wet ingredients and combine

Step 11: Fold in broken milk chocolate pieces and mini marshmallows

Step 12: Bake for 18-20 minutes and let cool before moving to wire rack

Yield: 6 jumbo muffins and 11 mini muffins - I like making bite-sized goodies for a small sampling and sharing :)

I had one of the mini s'more muffins right after the timer rang.  The crunch of the graham cracker with the gooeyness of the marshmallow and the melted chocolate was a fantastic combination!  I like how the muffin does not add to the sweetness of the graham cracker, marshmallows, and chocolate - so, it is more of a breakfast pastry than dessert for breakfast.  I think these muffins will be a big hit at the fundraiser!  I will be making at least three more types of muffins, two flavors of donut holes, and pancake poppers with sausage - I will be sharing some, if not all, of my breakfast stand recipes :)
